Ingredients:
- 2 lbs chicken drumsticks
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp onion powder
Instructions:
- Dry the chicken. Pat the chicken legs bone dry using paper towels. Note: Any leftover moisture will create steam and ruin the crunch.
- Apply the oil. Lightly coat the drumsticks in olive oil. Note: You only need enough to make the skin glistening, not dripping.
- Mix the rub. In a small bowl, whisk together garlic powder, smoked paprika, salt, black pepper, and onion powder.
- Season the meat. Toss the drumsticks in the seasoning blend until evenly coated.
- Arrange the basket. Place chicken in the air fryer basket in a single layer without overlapping.
- First fry. Air fry at 400°F (200°C) for 10 minutes until the skin begins to tighten and brown.
- Flip the legs. Carefully flip each leg using tongs to ensure 360 degree browning.
- Final fry. Cook for another 8–10 minutes until the skin is mahogany colored and internal temperature reaches 165°F to 185°F.
- Rest the meat. Transfer to a plate and let the chicken rest for 5 minutes. Note: This allows juices to redistribute so they don't run out when you bite in.
