Ingredients:
- 2 ½ cups (310g) all-purpose flour
- 1 cup (225g) unsalted butter, chilled and cubed
- 1 tsp (5g) salt
- 1 tbsp (12g) granulated sugar
- 6-8 tbsp (90-120ml) ice water
- 5 cups (650g) Granny Smith apples, peeled and sliced thin
- 1 ½ cups (180g) fresh cranberries
- ¾ cup (150g) brown sugar, packed
- 2 tbsp (16g) cornstarch
- 1 tsp (2g) ground cinnamon
- ¼ tsp (1g) ground nutmeg
- 1 tbsp (15ml) lemon juice
- ¾ cup (85g) chopped walnuts
- 3 tbsp (38g) brown sugar
- 1 egg
Instructions:
- Combine flour, salt, and sugar in a bowl. Cut in the chilled butter using a pastry cutter until the mixture resembles coarse crumbs with pea-sized lumps.
- Stir in ice water one tablespoon at a time until the dough just holds together. Divide into two discs, wrap in plastic, and chill for 30 minutes.
- Toss sliced apples and cranberries with lemon juice.
- In a separate small bowl, whisk together brown sugar, cornstarch, cinnamon, and nutmeg. Pour the dry mixture over the fruit and toss until evenly coated.
- Roll out the first disc and fit it into a 9-inch deep-dish pie plate. Sprinkle half of the chopped walnuts across the bottom.
- Pour in the fruit filling and top with the remaining walnuts.
- Roll out the second disc and place it over the top; crimp the edges to seal.
- Brush the top with a beaten egg and sprinkle with the remaining brown sugar.
- Bake at 400°F (200°C) for 20 minutes, then reduce to 375°F (190°C) for another 40 minutes until the crust is deep golden brown.
