Ingredients:
- 3 cups (270g) old-fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tbsp (6g) pumpkin pie spice
- 1/2 tsp (3g) sea salt
- 1 cup (245g) pumpkin puree
- 2 cups (480ml) almond milk
- 1/3 cup (80ml) maple syrup
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (60g) pecans
- 1 tbsp (12g) maple syrup
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9 inch square pan with coconut oil or line it with parchment paper.
- Whisk the rolled oats, baking powder, pumpkin pie spice, and salt in a medium bowl Note: Mixing these first prevents spice clumps.
- Beat the eggs in a large bowl until smooth.
- Stir the pumpkin puree, almond milk, maple syrup, and vanilla extract into the eggs. Whisk vigorously until the mixture is a smooth, orange liquid.
- Pour the dry oat mixture into the wet ingredients. Stir with a spatula until the oats are fully submerged in the Pumpkin Oatmeal batter.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Sprinkle chopped pecans and a drizzle of maple syrup over the surface.
- Bake 45–50 minutes until the edges are golden brown and the center is set.
- Let the pan cool for 10 minutes before slicing into 9 squares.
