Ingredients:

  • 3 cups (270g) old-fashioned rolled oats
  • 1 tsp (5g) baking powder
  • 1 tbsp (6g) pumpkin pie spice
  • 1/2 tsp (3g) sea salt
  • 1 cup (245g) pumpkin puree
  • 2 cups (480ml) almond milk
  • 1/3 cup (80ml) maple syrup
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (60g) pecans
  • 1 tbsp (12g) maple syrup

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9 inch square pan with coconut oil or line it with parchment paper.
  2. Whisk the rolled oats, baking powder, pumpkin pie spice, and salt in a medium bowl Note: Mixing these first prevents spice clumps.
  3. Beat the eggs in a large bowl until smooth.
  4. Stir the pumpkin puree, almond milk, maple syrup, and vanilla extract into the eggs. Whisk vigorously until the mixture is a smooth, orange liquid.
  5. Pour the dry oat mixture into the wet ingredients. Stir with a spatula until the oats are fully submerged in the Pumpkin Oatmeal batter.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Sprinkle chopped pecans and a drizzle of maple syrup over the surface.
  8. Bake 45–50 minutes until the edges are golden brown and the center is set.
  9. Let the pan cool for 10 minutes before slicing into 9 squares.
