Ingredients:
- 1.5 lbs center-cut salmon side
- 1 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 large organic lemon, half sliced into rounds and half juiced
- 3 cloves garlic, minced
- 2 tbsp fresh dill, finely chopped
- 1 tsp lemon zest
Instructions:
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper. Pat the salmon completely dry with paper towels to ensure a firm texture.
- In a small glass mixing bowl, whisk together the extra virgin olive oil, lemon juice, lemon zest, minced garlic, and half of the chopped dill to create a concentrated emulsion.
- Place the salmon on the prepared baking sheet. Pour the oil and lemon mixture over the fish, massaging it into the flesh. Season evenly with sea salt and cracked black pepper.
- Arrange the lemon slices across the top of the salmon. Slide the tray into the center rack of the oven and bake for 12–15 minutes until the fish is opaque and flakes easily with a fork.
- Remove from the oven and garnish with the remaining fresh dill before serving.
