Ingredients:
- 1.5 lbs boneless skinless chicken breasts, cut into 1-inch strips
- 1 tsp kosher salt
- 0.5 tsp cracked black pepper
- 1 tsp smoked paprika
- 8 oz full-fat cream cheese, softened
- 10 oz frozen chopped spinach, thawed and squeezed dry
- 3 cloves garlic, minced
- 0.5 cup sour cream
- 0.25 cup freshly grated Parmesan cheese
- 1.5 cups low-moisture shredded mozzarella cheese
- 0.5 tsp dried Italian seasoning
Instructions:
- Preheat oven to 400°F (200°C). Pat chicken strips dry with paper towels until the surface is matte.
- Place chicken directly in a 9x13 inch baking dish and toss with kosher salt, black pepper, and smoked paprika until evenly coated.
- In a medium mixing bowl, combine softened cream cheese, squeezed spinach, minced garlic, sour cream, and Parmesan cheese. Mix until a thick, cohesive paste forms.
- Dollop the spinach mixture over the chicken and spread into an even layer using a spatula to seal in moisture.
- Top with shredded mozzarella and dried Italian seasoning. Bake for 20 minutes or until the internal temperature of the chicken reaches 165°F (74°C) and the cheese is bubbly and golden.
