Ingredients:

  • 1 ¾ cups (210g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) baking powder
  • 1 tbsp (6g) ground cinnamon
  • 1 tsp (2g) pumpkin pie spice
  • ½ tsp (3g) salt
  • 1 cup (200g) brown sugar, packed
  • 1 can (15 oz / 425g) pumpkin puree
  • ½ cup (115g) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • ¼ cup (50g) granulated sugar
  • 1 tbsp (8g) ground cinnamon
  • 2 tbsp (28g) unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, 1 tbsp ground cinnamon, pumpkin pie spice, and salt until combined.
  3. In the same bowl (or a separate medium bowl), combine the melted and cooled butter, brown sugar, pumpkin puree, eggs, and vanilla. Stir until the mixture is smooth.
  4. Fold the dry ingredients into the wet mixture using a spatula just until no white streaks remain; do not overmix.
  5. Pour half of the batter into the prepared loaf pan. Sprinkle half of the mixture of granulated sugar and 1 tbsp ground cinnamon evenly over the batter.
  6. Top with the remaining batter, then sprinkle the remaining cinnamon-sugar mixture on top. Drizzle 2 tbsp of melted butter over the sugar.
  7. Bake for 55–65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
