Ingredients:
- 1 ¾ cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- 1 tbsp (6g) ground cinnamon
- 1 tsp (2g) pumpkin pie spice
- ½ tsp (3g) salt
- 1 cup (200g) brown sugar, packed
- 1 can (15 oz / 425g) pumpkin puree
- ½ cup (115g) unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- ¼ cup (50g) granulated sugar
- 1 tbsp (8g) ground cinnamon
- 2 tbsp (28g) unsalted butter, melted
Instructions:
- Preheat oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, 1 tbsp ground cinnamon, pumpkin pie spice, and salt until combined.
- In the same bowl (or a separate medium bowl), combine the melted and cooled butter, brown sugar, pumpkin puree, eggs, and vanilla. Stir until the mixture is smooth.
- Fold the dry ingredients into the wet mixture using a spatula just until no white streaks remain; do not overmix.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the mixture of granulated sugar and 1 tbsp ground cinnamon evenly over the batter.
- Top with the remaining batter, then sprinkle the remaining cinnamon-sugar mixture on top. Drizzle 2 tbsp of melted butter over the sugar.
- Bake for 55–65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
