Ingredients:
- 2 lbs chicken wings, flats and drumettes separated
- 1 tbsp cornstarch
- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly cracked
- 1 tbsp neutral oil
- 1 cup Coca-Cola Classic
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp fresh ginger, grated
- 2 cloves garlic, smashed
- 1 tsp rice vinegar
Instructions:
- Pat the chicken wings dry with paper towels. In a large bowl, toss the wings with cornstarch, salt, and pepper until evenly coated.
- Heat oil in a large non-stick skillet or wok over medium-high heat. Add wings in a single layer and sear for 3-4 minutes per side until the skin is golden and starting to crisp.
- Drain excess fat from the pan, leaving approximately 1 tablespoon. Add the smashed garlic and grated ginger, sautéing for 30 seconds until fragrant.
- Pour in the Coca-Cola, light soy sauce, dark soy sauce, and rice vinegar. Bring to a vigorous simmer.
- Continue to cook over medium heat, tossing the wings frequently, until the liquid reduces into a thick, syrupy glaze that coats the wings (about 15 minutes).
