Ingredients:

  • 2 lbs chicken wings, flats and drumettes separated
  • 1 tbsp cornstarch
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly cracked
  • 1 tbsp neutral oil
  • 1 cup Coca-Cola Classic
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp fresh ginger, grated
  • 2 cloves garlic, smashed
  • 1 tsp rice vinegar

Instructions:

  1. Pat the chicken wings dry with paper towels. In a large bowl, toss the wings with cornstarch, salt, and pepper until evenly coated.
  2. Heat oil in a large non-stick skillet or wok over medium-high heat. Add wings in a single layer and sear for 3-4 minutes per side until the skin is golden and starting to crisp.
  3. Drain excess fat from the pan, leaving approximately 1 tablespoon. Add the smashed garlic and grated ginger, sautéing for 30 seconds until fragrant.
  4. Pour in the Coca-Cola, light soy sauce, dark soy sauce, and rice vinegar. Bring to a vigorous simmer.
  5. Continue to cook over medium heat, tossing the wings frequently, until the liquid reduces into a thick, syrupy glaze that coats the wings (about 15 minutes).
