Ingredients:

  • 1 cup (225g) full-fat cottage cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • 1/4 tsp sea salt

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a 13x18 inch baking sheet with high-quality parchment paper.
  2. Combine the cottage cheese, eggs, garlic powder, and dried herbs in a high-speed blender or food processor.
  3. Pulse until the mixture is completely smooth with no visible lumps, achieving a consistency similar to thick pancake batter.
  4. Pour the batter onto the center of the parchment-lined sheet and use an offset spatula to spread it into an even rectangle, approximately 1/4 inch thick. Keep edges slightly thicker to prevent burning.
  5. Bake for 30 minutes until the flatbread is golden brown, firm to the touch, and easily peels away from the parchment paper.
