Ingredients:
- 2.5 cups (310g) all-purpose flour
- 1.5 cups (300g) granulated sugar
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) salt
- 0.5 cup (113g) unsalted butter, softened
- 2 large eggs
- 1 cup (240ml) full-fat sour cream
- 0.5 cup (120ml) whole milk
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) orange zest, freshly grated
- 1.5 cups (190g) dried cranberries
- 1 cup (125g) powdered sugar
- 2 tbsp (30ml) fresh orange juice
- 0.5 tsp (2g) orange zest
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch pan and line it with parchment paper, leaving an overhang on the sides.
- In a medium bowl, toss the dried cranberries with 1 tablespoon of the measured flour until lightly coated to prevent sinking.
- In a large bowl, cream together the softened butter and granulated sugar until the mixture is pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and milk, mixing until combined.
- Gently fold in the floured cranberries using a spatula until just combined; do not overmix.
- Spread the batter evenly into the prepared pan and bake for 40–50 minutes.
- Prepare the glaze by whisking together powdered sugar, fresh orange juice, and orange zest.
- Apply the zesty orange glaze over the cooled cake before serving.
