Ingredients:
- 1 lb ground beef (80/20 blend)
- 1 tbsp neutral oil
- 1 small yellow onion, finely diced
- 2 tbsp taco seasoning
- 1/2 cup refried beans
- 1/4 cup water
- 12 small corn tortillas
- 2 cups shredded Monterey Jack cheese
- 3 tbsp melted butter
Instructions:
- Place a skillet over medium-high heat with neutral oil. Add ground beef and diced onion, breaking meat into small crumbles. Sauté until beef is browned and onions are translucent.
- Stir in taco seasoning and water. Simmer for 3–5 minutes until the liquid reduces into a thick sauce coating the meat.
- Preheat oven to 425°F (218°C). Warm corn tortillas in the microwave between damp paper towels for 30 seconds until pliable.
- Assemble tacos by spreading a thin layer of refried beans on one half of each tortilla, followed by the beef mixture and a sprinkle of cheese. Fold the tortillas to close.
- Arrange tacos on a rimmed sheet pan. Brush the tops with melted butter or oil and bake for 10-15 minutes until the shells are golden brown and crispy.
