Ingredients:

  • 1 lb ground beef (80/20 blend)
  • 1 tbsp neutral oil
  • 1 small yellow onion, finely diced
  • 2 tbsp taco seasoning
  • 1/2 cup refried beans
  • 1/4 cup water
  • 12 small corn tortillas
  • 2 cups shredded Monterey Jack cheese
  • 3 tbsp melted butter

Instructions:

  1. Place a skillet over medium-high heat with neutral oil. Add ground beef and diced onion, breaking meat into small crumbles. Sauté until beef is browned and onions are translucent.
  2. Stir in taco seasoning and water. Simmer for 3–5 minutes until the liquid reduces into a thick sauce coating the meat.
  3. Preheat oven to 425°F (218°C). Warm corn tortillas in the microwave between damp paper towels for 30 seconds until pliable.
  4. Assemble tacos by spreading a thin layer of refried beans on one half of each tortilla, followed by the beef mixture and a sprinkle of cheese. Fold the tortillas to close.
  5. Arrange tacos on a rimmed sheet pan. Brush the tops with melted butter or oil and bake for 10-15 minutes until the shells are golden brown and crispy.
