Ingredients:

  • 1 Large English Cucumber (approximately 300g)
  • 6 oz Ultra-Thin Sliced Deli Turkey Breast
  • 2 tbsp Neufchâtel Cheese
  • 1 tsp Dijon Mustard
  • 1/4 tsp Cracked Black Pepper
  • 1/8 tsp Smoked Paprika
  • 1 tbsp Fresh Chives or Dill, finely chopped

Instructions:

  1. Wash the English cucumber thoroughly. Using a Y-peeler or mandoline, shave long, wide ribbons starting from one side. Stop once you reach the watery seed core, flip, and repeat.
  2. Lay the cucumber ribbons flat on paper towels. Pat the tops firmly with more paper towels to remove excess moisture; this ensures the rolls stay crispy and the spread adheres.
  3. In a small bowl, whisk together the Neufchâtel cheese, Dijon mustard, cracked black pepper, and smoked paprika until smooth.
  4. Lay out the turkey slices. Spread a thin, even layer of the cheese mixture onto the turkey, then sprinkle with fresh chives or dill.
  5. Place the seasoned turkey slices on top of the cucumber ribbons. Roll them up tightly from one end to the other.
  6. Serve immediately for maximum crunch.
