Ingredients:
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) packed light brown sugar
- 1 tsp (2g) ground cinnamon
- 4 tbsp (57g) cold unsalted butter, cubed
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 cup (240g) full-fat sour cream
- 1 cup (110g) dried cranberries
Instructions:
- In a small bowl, whisk together the flour, brown sugar, and cinnamon for the streusel.
- Add the cold, cubed butter to the streusel mixture. Using a fork or your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized lumps.
- Set aside the streusel in the refrigerator to keep the butter cold until the moment of baking.
- In a large bowl, beat the softened butter and granulated sugar on medium-high speed until the mixture is pale and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Whisk the flour, baking powder, and salt together. Add one-third of the flour mixture to the butter, then half of the sour cream, repeating until just combined. Stop mixing.
- Lightly coat the dried cranberries in a bit of flour to prevent sinking, then gently fold them into the batter.
- Pour the batter into a prepared baking pan and spread the chilled streusel topping evenly over the top.
- Bake for 38 minutes until the top is golden brown and a toothpick comes out clean.
