Ingredients:

  • 1/2 cup (115g) unsalted butter, melted and warm
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1/2 cup (45g) unsweetened cocoa powder, Dutch-processed
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp fine sea salt
  • 1/2 cup (85g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large microwave-safe glass bowl, combine the warm melted butter and granulated sugar. Whisk vigorously for 1-2 minutes to begin dissolving the sugar.
  3. Add the eggs one at a time, whisking for another full minute after each addition until the mixture appears pale and slightly thickened. Stir in the vanilla extract.
  4. Sift the cocoa powder, flour, and salt directly into the wet mixture. Using a silicone spatula, gently fold the dry ingredients into the wet until just a few streaks of flour remain, being careful not to over-mix.
  5. Fold in the semi-sweet chocolate chips if using.
  6. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 22–25 minutes. The center should be set but remain slightly moist.
