Ingredients:
- 2 cups (300g) fresh cherries, pitted and halved
- 1/4 cup (50g) granulated sugar
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5ml) vanilla extract
- 2 cups (480ml) heavy whipping cream, cold
- 1 can (14 oz / 397g) sweetened condensed milk, chilled
- 1/4 tsp (1.5g) fine sea salt
Instructions:
- Combine halved cherries, sugar, and lemon juice in a saucepan over medium heat.
- Simmer for 15–20 minutes, stirring occasionally, until the mixture thickens into a jam-like consistency.
- Remove from heat, stir in the vanilla extract, and let the reduction cool completely.
- Pour the cold heavy whipping cream and salt into a chilled bowl and beat on medium-high speed until stiff peaks form.
- Gently fold in the chilled sweetened condensed milk using a rubber spatula in a figure-eight motion to maintain aeration.
- Gently swirl in the cooled cherry reduction, leaving thick streaks for a marbled effect.
- Pour the mixture into a loaf pan, cover the surface with parchment paper to prevent ice crystals, and freeze for at least 6 hours.
