Ingredients:

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced into rounds
  • 2 medium zucchini, diced
  • 2 ears fresh corn, kernels cut off the cob
  • fresh spinach

Instructions:

  1. Prepare the mise en place by chopping all vegetables. Group the harder vegetables (carrots and onions) separately from the tender ones (zucchini and spinach).
