Ingredients:
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, sliced into rounds
- 2 medium zucchini, diced
- 2 ears fresh corn, kernels cut off the cob
- fresh spinach
Instructions:
- Prepare the mise en place by chopping all vegetables. Group the harder vegetables (carrots and onions) separately from the tender ones (zucchini and spinach).
