Ingredients:

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 3 cloves garlic, minced
  • 1½ cups low-fat whole milk
  • 1 cup freshly grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/8 tsp ground nutmeg

Instructions:

  1. Melt 2 tbsp unsalted butter in a medium saucepan over medium heat. Once bubbling, add 3 cloves minced garlic and sauté for about 1 minute until fragrant but not browned.
  2. Whisk in 2 tbsp all-purpose flour and cook for 1–2 minutes to remove the raw flour taste until the mixture is a pale, bubbling paste.
  3. Slowly pour in 1½ cups low-fat whole milk while whisking constantly to ensure no lumps form. Continue simmering for 3–5 minutes until the sauce thickens enough to coat the back of a spoon.
  4. Reduce the heat to low. Stir in 1 cup freshly grated Parmesan cheese, 1/4 tsp salt, 1/4 tsp ground black pepper, and 1/8 tsp ground nutmeg.
  5. Whisk gently until the cheese is completely melted and the texture is silky and smooth, then remove from heat immediately.
