Ingredients:

  • 1 lb lean ground beef
  • 1/2 cup water
  • 2 tbsp taco seasoning
  • 1 cup shredded sharp cheddar or Monterey Jack cheese
  • 2 cloves garlic, minced
  • 1/4 cup finely diced white onion
  • 8 corn tortillas
  • 3 tbsp neutral oil

Instructions:

  1. Brown the ground beef, onion, and garlic over medium-high heat until the meat is deeply browned and fragrant.
  2. Stir in the taco seasoning and water, simmering until the liquid has completely evaporated and the filling is thick.
  3. Remove from heat and fold in the shredded cheese until just melted.
  4. Warm the corn tortillas in a damp paper towel for 30 seconds in the microwave to make them pliable.
  5. Spoon about 2 tablespoons of the beef and cheese mixture into the center of each tortilla and roll tightly.
  6. For pan-frying: Heat oil in a skillet over medium, place taquitos seam-side down, and fry for 1–2 minutes per side until mahogany-colored.
  7. For air fryer: Lightly spray basket with oil, arrange taquitos in a single layer, and cook at 400°F (200°C) for 7–10 minutes, flipping halfway through.
