Ingredients:
- 2 cups heavy whipping cream, cold
- 1 can (14 oz) sweetened condensed milk
- 1 tsp pure vanilla extract
- 1/4 tsp fine sea salt
- 1 cup fresh dark sweet cherries, pitted and roughly chopped
- 1/2 cup dark chocolate (60% cocoa or higher), finely chopped
- 1 tbsp lemon juice
Instructions:
- Toss the chopped cherries with the lemon juice in a small bowl. Let them sit for 10 minutes to macerate. Chop the dark chocolate into irregular shards.
- Pour the cold heavy whipping cream into your chilled bowl. Beat on medium high speed until soft peaks form.
- In a separate bowl, whisk the sweetened condensed milk, vanilla extract, and salt. Mix until the texture is completely smooth.
- Use a rubber spatula to gently fold the whipped cream into the condensed milk. Use a cut and fold motion to keep the air inside.
- Fold in the macerated cherries and chocolate shards. Stop as soon as they are distributed so you don't deflate the cream.
- Pour the mixture into your 9x5 inch loaf pan.
- Smooth the top with your spatula.
- Cover tightly and freeze for at least 6 hours until firm to the touch.
