Ingredients:

  • 2 cups heavy whipping cream, cold
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp pure vanilla extract
  • 1/4 tsp fine sea salt
  • 1 cup fresh dark sweet cherries, pitted and roughly chopped
  • 1/2 cup dark chocolate (60% cocoa or higher), finely chopped
  • 1 tbsp lemon juice

Instructions:

  1. Toss the chopped cherries with the lemon juice in a small bowl. Let them sit for 10 minutes to macerate. Chop the dark chocolate into irregular shards.
  2. Pour the cold heavy whipping cream into your chilled bowl. Beat on medium high speed until soft peaks form.
  3. In a separate bowl, whisk the sweetened condensed milk, vanilla extract, and salt. Mix until the texture is completely smooth.
  4. Use a rubber spatula to gently fold the whipped cream into the condensed milk. Use a cut and fold motion to keep the air inside.
  5. Fold in the macerated cherries and chocolate shards. Stop as soon as they are distributed so you don't deflate the cream.
  6. Pour the mixture into your 9x5 inch loaf pan.
  7. Smooth the top with your spatula.
  8. Cover tightly and freeze for at least 6 hours until firm to the touch.
