Ingredients:
- 4 large Roma tomatoes, seeded and chopped
- 1 small white onion, roughly chopped
- 2 cloves garlic, peeled
- 1 jalapeño pepper, stemmed
- 1/2 cup fresh cilantro, loosely packed
- 2 tbsp fresh lime juice
- 1 tsp sea salt
- 1/4 tsp ground cumin
- 1/4 tsp cracked black pepper
Instructions:
- Place the white onion, garlic, and jalapeño into the food processor. Pulse 3–5 times until the pieces are finely minced but not a paste.
- Add the chopped Roma tomatoes to the processor. Pulse 2–3 times—just enough to break the tomatoes down into chunky pieces.
- Transfer the mixture to a mixing bowl. Fold in the fresh cilantro, lime juice, salt, cumin, and black pepper. Stir gently until combined.
