Ingredients:

  • 4 large Roma tomatoes, seeded and chopped
  • 1 small white onion, roughly chopped
  • 2 cloves garlic, peeled
  • 1 jalapeño pepper, stemmed
  • 1/2 cup fresh cilantro, loosely packed
  • 2 tbsp fresh lime juice
  • 1 tsp sea salt
  • 1/4 tsp ground cumin
  • 1/4 tsp cracked black pepper

Instructions:

  1. Place the white onion, garlic, and jalapeño into the food processor. Pulse 3–5 times until the pieces are finely minced but not a paste.
  2. Add the chopped Roma tomatoes to the processor. Pulse 2–3 times—just enough to break the tomatoes down into chunky pieces.
  3. Transfer the mixture to a mixing bowl. Fold in the fresh cilantro, lime juice, salt, cumin, and black pepper. Stir gently until combined.
