Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (25g) cocoa powder
  • 2 tbsp (16g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 1 large egg
  • 1/2 cup (120ml) whole milk
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (100g) packed brown sugar
  • 1/4 cup (25g) cocoa powder
  • 1 1/4 cups (300ml) boiling water

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or 2.5 quart ceramic dish.
  2. In a medium bowl, cream together the melted butter and granulated sugar. Beat in the egg and vanilla extract until smooth.
  3. Sift in the flour, cocoa powder, baking powder, and salt, then stir in the milk. Pour the batter into the prepared baking pan and spread evenly.
  4. In a small bowl, whisk together the brown sugar and the second portion of cocoa powder. Sprinkle this dry mixture evenly over the top of the raw batter without stirring.
  5. Carefully pour the boiling water over the back of a spoon onto the top of the cocoa mixture to prevent digging holes in the batter. Do not stir.
  6. Bake for 35–45 minutes until the center of the cake is almost set and the sauce is bubbling vigorously around the edges.
