Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1/4 cup (25g) cocoa powder
- 2 tbsp (16g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 large egg
- 1/2 cup (120ml) whole milk
- 1 tsp (5ml) vanilla extract
- 1/2 cup (100g) packed brown sugar
- 1/4 cup (25g) cocoa powder
- 1 1/4 cups (300ml) boiling water
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or 2.5 quart ceramic dish.
- In a medium bowl, cream together the melted butter and granulated sugar. Beat in the egg and vanilla extract until smooth.
- Sift in the flour, cocoa powder, baking powder, and salt, then stir in the milk. Pour the batter into the prepared baking pan and spread evenly.
- In a small bowl, whisk together the brown sugar and the second portion of cocoa powder. Sprinkle this dry mixture evenly over the top of the raw batter without stirring.
- Carefully pour the boiling water over the back of a spoon onto the top of the cocoa mixture to prevent digging holes in the batter. Do not stir.
- Bake for 35–45 minutes until the center of the cake is almost set and the sauce is bubbling vigorously around the edges.
