Ingredients:
- 1 lb boneless skinless chicken breast, diced into 1/2 inch cubes
- 8 cups low-sodium chicken broth
- 1/4 cup fresh lime juice
- 1/2 cup fresh cilantro, chopped
- 1 cup fresh baby spinach
Instructions:
- Heat a large soup pot over medium-high heat. Add the diced chicken and sear until the edges are white and just beginning to brown.
- Pour in the chicken broth. Bring the mixture to a rolling boil, then immediately reduce heat to a simmer for 10-12 minutes until the chicken is cooked through.
- Remove the pot from the heat. Stir in the lime juice, fresh cilantro, and baby spinach until the greens are wilted.
