Ingredients:

  • 1 lb boneless skinless chicken breast, diced into 1/2 inch cubes
  • 8 cups low-sodium chicken broth
  • 1/4 cup fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • 1 cup fresh baby spinach

Instructions:

  1. Heat a large soup pot over medium-high heat. Add the diced chicken and sear until the edges are white and just beginning to brown.
  2. Pour in the chicken broth. Bring the mixture to a rolling boil, then immediately reduce heat to a simmer for 10-12 minutes until the chicken is cooked through.
  3. Remove the pot from the heat. Stir in the lime juice, fresh cilantro, and baby spinach until the greens are wilted.
