Ingredients:

  • 1 3/4 cups (220g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tbsp (6g) ground cinnamon
  • 1/2 tsp (1g) ground nutmeg
  • 1/4 tsp (1g) ground cloves
  • 1 cup (245g) pumpkin puree
  • 1/2 cup (120ml) vegetable oil
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) milk

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin pan with paper liners or grease the cups thoroughly with non-stick spray.
  3. In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves until no clumps remain.
  4. Create a well in the center of the dry ingredients and pour in the pumpkin puree, oil, eggs, vanilla, and milk.
  5. Using a rubber spatula, gently fold the wet ingredients into the dry until no streaks of flour remain; do not over-mix.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes, or until the tops spring back when touched and a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
