- 1 tsp (5ml) vanilla extract
- 3 tbsp (42g) unsalted butter, softened
- 1/3 cup (65g) brown sugar
- 1 tbsp (8g) ground cinnamon
- 1/2 cup (60g) powdered sugar
- 1 tbsp (15ml) milk
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, ground cinnamon, ground ginger, and ground cloves.
- In a separate bowl, beat the eggs, oil, 1 cup brown sugar, pumpkin puree, and vanilla extract until the mixture is smooth and glossy.
- Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.
- In a small bowl, cream together the softened butter, 1/3 cup brown sugar, and 1 tbsp cinnamon using a fork or small spatula until it forms a thick, spreadable paste.
- Layer the batter and cinnamon paste into the pan to create a swirl effect, then bake for 55 minutes or until a toothpick comes out clean.
- Whisk together powdered sugar, milk, and vanilla extract to create a glaze and drizzle over the cooled bread.
