Ingredients:
- 1 lb English cucumber, thinly sliced
- 1 tbsp Kosher salt
- 1/2 cup rice vinegar
- 1/2 cup water
- 2 tbsp granulated sugar
- 1 tsp salt
- 2 cloves garlic, smashed
- 1 tsp black peppercorns
- 1 sprig fresh dill
Instructions:
- Toss the sliced cucumbers with 1 tbsp (15g) of Kosher salt in a colander and let them sit for 15 minutes to draw out moisture.
- Rinse the salted cucumbers quickly with cold water and pat dry with a paper towel.
- Combine rice vinegar, water, sugar, and salt in a small saucepan and bring to a gentle simmer over medium heat, stirring until crystals have dissolved.
- Place smashed garlic, peppercorns, and dill at the bottom of a glass Mason jar.
- Pack the dried cucumber slices tightly on top of the aromatics in the jar.
- Pour the hot brine over the cucumbers until completely submerged, seal the lid, and let sit at room temperature for 10 minutes before refrigerating.
