Ingredients:

  • 1 lb English cucumber, thinly sliced
  • 1 tbsp Kosher salt
  • 1/2 cup rice vinegar
  • 1/2 cup water
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 2 cloves garlic, smashed
  • 1 tsp black peppercorns
  • 1 sprig fresh dill

Instructions:

  1. Toss the sliced cucumbers with 1 tbsp (15g) of Kosher salt in a colander and let them sit for 15 minutes to draw out moisture.
  2. Rinse the salted cucumbers quickly with cold water and pat dry with a paper towel.
  3. Combine rice vinegar, water, sugar, and salt in a small saucepan and bring to a gentle simmer over medium heat, stirring until crystals have dissolved.
  4. Place smashed garlic, peppercorns, and dill at the bottom of a glass Mason jar.
  5. Pack the dried cucumber slices tightly on top of the aromatics in the jar.
  6. Pour the hot brine over the cucumbers until completely submerged, seal the lid, and let sit at room temperature for 10 minutes before refrigerating.
