Ingredients:
- 1 lb snow crab legs, clusters separated
- 0.5 lb large shrimp, peeled and deveined
- 1 cup frozen baby corn pieces
- 1 cup cauliflower florets
- 0.5 cup mini sweet peppers, sliced
- 1 tbsp fresh parsley, chopped
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1 tbsp fresh lemon juice
- 0.5 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C).
- In a medium mixing bowl, whisk together the melted butter, minced garlic, Cajun seasoning, lemon juice, and smoked paprika until the sauce is a mahogany-colored emulsion.
- Toss the cauliflower, corn, and peppers in half of the garlic butter sauce until evenly coated.
- Tear two large sheets of heavy-duty foil (approx. 12x18 inches). Divide the seasoned vegetables into the center of each sheet.
- Top the vegetables with the crab leg clusters and shrimp, then drizzle the remaining garlic butter sauce over the seafood.
- Fold the sides of the foil inward and crimp the edges tightly to create a sealed pouch, leaving a small pocket of air inside for steam circulation.
- Place the packets on a baking sheet and bake for 15–20 minutes until shrimp is opaque and pink and crab legs pull away from the shell.
- Carefully open the foil and garnish with fresh parsley and a squeeze of extra lemon.
