Ingredients:

  • 1 lb snow crab legs, clusters separated
  • 0.5 lb large shrimp, peeled and deveined
  • 1 cup frozen baby corn pieces
  • 1 cup cauliflower florets
  • 0.5 cup mini sweet peppers, sliced
  • 1 tbsp fresh parsley, chopped
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 tbsp fresh lemon juice
  • 0.5 tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a medium mixing bowl, whisk together the melted butter, minced garlic, Cajun seasoning, lemon juice, and smoked paprika until the sauce is a mahogany-colored emulsion.
  3. Toss the cauliflower, corn, and peppers in half of the garlic butter sauce until evenly coated.
  4. Tear two large sheets of heavy-duty foil (approx. 12x18 inches). Divide the seasoned vegetables into the center of each sheet.
  5. Top the vegetables with the crab leg clusters and shrimp, then drizzle the remaining garlic butter sauce over the seafood.
  6. Fold the sides of the foil inward and crimp the edges tightly to create a sealed pouch, leaving a small pocket of air inside for steam circulation.
  7. Place the packets on a baking sheet and bake for 15–20 minutes until shrimp is opaque and pink and crab legs pull away from the shell.
  8. Carefully open the foil and garnish with fresh parsley and a squeeze of extra lemon.
