Instructions:
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.
- In a separate jug or bowl, blend the milk, egg, vegetable oil, vanilla extract, and optional yellow food coloring.
- Pour the wet emulsion into the dry base and stir with a spatula to fold them together until just combined. Stop as soon as the flour streaks disappear; lumps are necessary for a fluffy texture.
- Heat a non-stick frying pan or griddle over medium-low heat and lightly brush with oil or margarine.
- Ladle 1/4 cup of batter per hotcake onto the pan, ensuring they have room to expand.
- Cook for about 2 minutes until bubbles form on the surface and the edges look set and matte.
- Flip in one confident motion and cook the other side for another 1 to 2 minutes until the center springs back when lightly pressed.
