Ingredients:

  • 1/2 cup mashed overripe banana (approx. 1 large banana)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/2 cup granulated white sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp fine sea salt
  • 1 cup semi-sweet chocolate chips (optional)
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream the softened butter, brown sugar, and white sugar until the mixture is pale and fluffy, approximately 2 minutes.
  3. Incorporate the egg yolk, vanilla extract, and mashed banana into the butter mixture. Beat on medium speed until the banana is fully integrated and no large chunks remain.
  4. In a separate small bowl, whisk together the flour, cornstarch, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined. Fold in chocolate chips or walnuts if using.
  6. Using a 1.5 tablespoon cookie scoop, place dough balls onto prepared baking sheets. Bake for 10 minutes until the edges are golden brown but the centers remain soft.
