Ingredients:
- 1/2 cup mashed overripe banana (approx. 1 large banana)
- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/2 cup granulated white sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp fine sea salt
- 1 cup semi-sweet chocolate chips (optional)
- 1/2 cup chopped walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, cream the softened butter, brown sugar, and white sugar until the mixture is pale and fluffy, approximately 2 minutes.
- Incorporate the egg yolk, vanilla extract, and mashed banana into the butter mixture. Beat on medium speed until the banana is fully integrated and no large chunks remain.
- In a separate small bowl, whisk together the flour, cornstarch, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined. Fold in chocolate chips or walnuts if using.
- Using a 1.5 tablespoon cookie scoop, place dough balls onto prepared baking sheets. Bake for 10 minutes until the edges are golden brown but the centers remain soft.
