Ingredients:

  • 2 lbs (900g) Sugar Pumpkin or Pie Pumpkin, peeled and cubed
  • 1/2 cup (120ml) Water
  • 1/4 tsp (1.5g) Sea salt

Instructions:

  1. Cut the pumpkin in half and scoop out the seeds and fibrous strings. Peel the skin and cut the flesh into uniform 1-inch (2.5cm) cubes.
  2. Place the pumpkin cubes, water, and salt into a pot. Bring to a boil over medium-high heat, then immediately reduce heat to low. Cover with a lid and simmer for 15–20 minutes until a fork slides into a cube with zero resistance.
  3. Drain excess water from the pot, reserving 2 tablespoons of the liquid if needed for consistency.
  4. Puree the mixture using an immersion blender directly in the pot or a food processor until completely smooth. Alternatively, use a potato masher and push the mixture through a fine-mesh sieve.
