Ingredients:
- 1 ¾ cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- ½ tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1 tsp (2g) ground ginger
- ¼ tsp (1g) ground cloves
- ½ cup (115g) unsalted butter, melted and cooled
- 1 cup (200g) light brown sugar, packed
- 2 large eggs, room temperature
- 1 cup (245g) pumpkin purée
- 1 tsp (5ml) vanilla extract
- ½ cup (65g) all-purpose flour
- ½ cup (100g) packed brown sugar
- 1 tsp (5g) ground cinnamon
- 4 tbsp (55g) cold unsalted butter, cubed
- ½ cup (60g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tbsp (15ml) milk or heavy cream
Instructions:
- Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves. Set aside.
- In a large bowl, stir together the melted butter and brown sugar until smooth. Whisk in the eggs, pumpkin purée, and vanilla extract until the mixture is velvety and combined.
- Gently fold the dry ingredients into the wet ingredients using a spatula. Stir just until no streaks of flour remain.
- In a small bowl, combine flour, brown sugar, and cinnamon for the streusel.
- Using a fork or your fingertips, work the cold cubed butter into the streusel mixture until it resembles coarse, sandy crumbs.
- Place the streusel in the freezer for 5 minutes while prepping the pan.
- Pour the batter into the pan and sprinkle the chilled streusel evenly across the top, pressing very lightly.
- Bake in the center rack of the oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
- Optional: Whisk powdered sugar, maple syrup, and milk together and drizzle over the completely cooled bread.
