Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp (10g) baking powder
  • ½ tsp (3g) salt
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • 1 large egg, room temperature
  • ½ cup (120ml) fresh orange juice
  • 1 tbsp (6g) orange zest, finely grated
  • 1 tsp (5ml) vanilla extract
  • ¼ cup (60ml) whole milk, room temperature
  • 1 cup (120g) dried cranberries
  • 1 cup (120g) powdered sugar, sifted
  • 2 tbsp (30ml) fresh orange juice
  • ½ tsp (2g) orange zest

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. In a small bowl, toss the dried cranberries with one tablespoon of the measured flour until evenly coated.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. In a separate jug, combine the melted butter, egg, orange juice, orange zest, vanilla, and milk.
  5. Pour the wet ingredients into the dry ingredients, stirring with a spatula until just combined; do not overmix.
  6. Gently fold in the floured cranberries.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 50-55 minutes until the top is deep golden-brown and a toothpick inserted into the center comes out clean.
  9. Whisk together powdered sugar, orange juice, and orange zest to create the glaze, then drizzle over the cooled loaf.
