Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- ½ tsp (3g) salt
- ½ cup (113g) unsalted butter, melted and slightly cooled
- 1 large egg, room temperature
- ½ cup (120ml) fresh orange juice
- 1 tbsp (6g) orange zest, finely grated
- 1 tsp (5ml) vanilla extract
- ¼ cup (60ml) whole milk, room temperature
- 1 cup (120g) dried cranberries
- 1 cup (120g) powdered sugar, sifted
- 2 tbsp (30ml) fresh orange juice
- ½ tsp (2g) orange zest
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- In a small bowl, toss the dried cranberries with one tablespoon of the measured flour until evenly coated.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate jug, combine the melted butter, egg, orange juice, orange zest, vanilla, and milk.
- Pour the wet ingredients into the dry ingredients, stirring with a spatula until just combined; do not overmix.
- Gently fold in the floured cranberries.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50-55 minutes until the top is deep golden-brown and a toothpick inserted into the center comes out clean.
- Whisk together powdered sugar, orange juice, and orange zest to create the glaze, then drizzle over the cooled loaf.
